Sno Ingredients Quantity
1 Tomatoes ½ kg
2 onions 60 gms
3 garlic 5gms
4 ginger 1 tsp
5 turmeric
pwd 1 tsp

chilli pwd 1 tsp
7 salt to taste
8 coriander chopped 30gms
9 vinegar 25 ml

12 refined oil 30 ml
Methods
- 1. blanch tomatoes, remove skin and chop them roughly.
- 2. Slice onion, make paste of ginger and garlic
- 3. Heat oil in kadhai, add slice onions and cook till golden brown, add ginger garlic paste and cook for another 5 minutes.
- 4. Add turmeric powder, red chili powder, coriander cook for a minute.
- 5. Add add tomatoes, add salt, cook till the fat leaves the masala.
- 6. Add vinegar and sugar and continue cooking.
- 7. Check seasoning
- 8. In a baking tray arrange a layer of the tomato mixture, and make four indentation in it, which can accommodate one egg each.
- 9. Break one egg into each hollow and bake in oven till the eggs are cooked and firm
- 10. Serve one egg per person, garnished with finely chopped coriander leaves.
