Recipe Spaghetti Napolitano


Sno                            Ingredients                Quantity

1.                            Spaghetti                    250 grams
2.                            Olive Oil                      30 ml
3.                            Tomato                       1 kg
4.                            Onions                        25 grams
5.                            Garlic                          10 grams
6.                            Celery                         5 grams
7.                            Thyme and oregano   a thick pinch of each
8.                            Basil leaves                few
9.                            Sugar                          a pinch
10.                        Mozzarella Cheese    100 grams

Methods

1.    Boil around 2 liters of water in a stock pot, add a pinch of Salt and oil, and cook spaghetti in water till al dente stage (firm and cooked, chewy texture).
2.    When cooked, drain, don’t refresh ( do not put in a cold water or water bath) 
3.    Finely chop onions, garlic & celery.
4.    Blanch tomatoes, remove seeds and skin, and prepare tomato puree.
5.    Heat oil in pan, sauté onions, garlic and celery, add tomato puree and cook for around 15 minutes.
6.    Add seasoning, thyme and oregano.
7.    Mix in the cooked spaghetti and cook for another 5 minutes.
8.    If required add sugar to adjust taste of sour tomatoes.

9.    Sprinkle grated cheese, olive oil and chopped basil leaves, serve hot.                                            

Recipe Poisson Meuniere

Sno                 Ingredients                            Quantity

1.    Fish Fillet                                          800 grams
2.    Lime                                                  4 numbers
3.    Butter & Oil                                        to fry                                      
4.    Refined Flour                                    100 grams
5.    Parsley                                              1 bunch
6.    Salt and Pepper                                 to taste

Methods

1.    Prepare fish fillets.
2.    Coat the fish fillets with seasoned flour.
3.    Shallow fry fish in mixture of oil and butter on a medium heat till golden brown.
4.    Serve with parsley butter (finely chop parsley and blend in the butter) and lemon wedges.

Recipe Chicken Fricassee


Sno                 Ingredients                Quantity

1                      Chicken                     1 kgs
2                      butter                         30 gms
3                      onions                       60 gms
4                      Flour                          60 gms
5                      chicken stock             500 ml
6                      bay leaf                     1         
7                      celery                        1 inch piece
8                      parsley stems            2         
9                      thyme                        a pinch
10                    egg yolks                   1
11                    Heavy cream             80 ml
12                    lemon juice                5 ml
13                    salt and pepper         to taste
14                    nutmeg                      a pinch

Methods

1)    Cut the chicken in to 8 pieces and season with salt and white pepper
2)    Melt butter in a brazier or stock pot over moderate heat.
3)    Add chicken and onions cut in to brunnoise and sauté it lightly till the chicken is seared on all sides. ( no coloring )
4)    Add flour and stir, cook for two minutes.
5)    Gradually add enough stock to cover the chicken and bring to simmer.
6)    Add the herbs tied in a cheese cloth
7)    Cover and place in a slow oven 150 degree Celsius, cook till tender.
8)    Remove chicken and de grease (remove excess fat) the sauce, reduce it over high heat and strain.
9)    Combine the egg yolks and cream and temper with a little hot sauce, add the liaison in to sauce and simmer.
10) Season to taste and add lemon and nutmeg.
11) Serve garnished with parsley.

Recipe Poulet Roti Au Jus

Sno                 Ingredients                            Quantity

1.                Chicken                                 1 whole
2.                Olive Oil                                 30 ml                                     
3.                Celery                                    50 gms
4.                Onion                                     50 gms
5.                Carrots                                   75 gms
6.                Turnips                                   50 gms
7               Rosemary, thyme                  a pinch
8               Salt and pepper                    to taste

Methods

1.    Remove sinews, blood and excessive fat from the chicken.
2.    Marinate chicken with olive oil mixed with rosemary, thyme and seasoning, leave it for at least 6 – 8 hrs.
3.    Roughly chop vegetables and season lightly.
4.    In a roasting pan, arrange vegetable along with left out marinate, place chicken on top. ( Back of the chicken should be facing the direct heat)
5.    Roast the chicken at 180 degree centigrade for 20 min.
6.    Baste chicken occasionally with olive oil and change sides.
7.    Finish cooking after around 45 minutes.
8.    Remove chicken and deglaze the pan (deglaze means to remove excess fat), add a little stock to vegetables and simmer for 5 minutes, blend in the food processor and check seasoning of sauce.
9.    Cut chicken in to 8 pieces and serve hot along with sauce.

Recipe Chicken Milanese


Sno                        Ingredients                         Quantity

  1.                        Chicken Breasts Boneless         4
  2.                      All-purpose flour                    100 grams
  3.                        Eggs                                       2 number
  4.                        Milk                                       100 ml
  5.                        Grated Parmesan Cheese       50 grams
  6.                        Bread Crumbs                        100 grams
  7.                        Olive oil                                 to fry
  8.                        Salt and Pepper                      to taste


Methods
  1.           Clean and flatten the chicken breasts with help of mallet (wooden hammer to flatten meat).
  2.           Season the all-purpose flour with salt and pepper.
  3.           Lightly beaten eggs and blend in milk.
  4.           Mix grated cheese with bread crumbs.
  5.           Coat the flattened chicken breasts with refined flour, dip in egg mixture and then in cover it with bread crumbs.
  6.          Shallow fry the chicken in hot olive oil, serve hot with arugula salad.

Recipe Chilli Con Carne ( Mexican Delight)

1.                               Olive Oil                               30 ml ( 2 Table spoon)
2.                               Onions Chopped              100 grams ( 3 to 4 depending on size)
3.                               Garlic Chopped                 10 to 15 grams ( 2 to 4 depending on size and preference of garlic flavor)
4.                               Red Bell Pepper
                      Chopped                               150 grams (1 number)
5.                               Green Bell  Pepper
Chopped                             150 grams (1 number)
6.                               Mince Meat                       500 grams
7.                               Stock                                     300ml
8.                               Tomatoes chopped         200 grams
9.                               Tomato Puree                   50 grams
10.                           Red Kidney Beans            250 grams ( Cooked )
11.                           Red Chili Powder              ½ Tea Spoon
12.                           Cumin Powder                  ½ Tea Spoon
13.                           Paprika Powder                ½ Tea Spoon
14.                           Salt and Pepper                to taste
Methods
1.       In a thick bottom pot heat olive oil.
2.       Add chopped onions and chopped garlic, cook on a moderate flame till tender (3-4 minutes).
3.       Add chopped red and green bell peppers, cook for another five minutes.
4.       Blend in the mincemeat and continue cooking till the meat is browned.  ( 15 minutes).
5.       Add stock, chopped tomatoes, tomato puree and continue cooking. ( 10 Minutes)
6.       Add red kidney beans, red chili powder, cumin powder, paprika powder, pepper powder and salt.

7.       Cover the pot and simmer for another half an hour, cook till the sauce is thick. Adjust seasoning and serve hot.

Recipe Polenta






Sno                        Ingredients                         Quantity

1.                               Corn Meal                           1 cup
2.                               Water                                   4 cup
3.                               Butter                                   75 gms
4.                               Cheese                                 1 cup
5.                               Salt and pepper                    to taste

Methods

1.       Heat water along with salt and bring it to boil.
2.       Sprinkle corn meal in boiling water, a small amount at one time and stir it vigorously. Continue till the entire corn meal is consumed. Simmer for 30 minutes or till it leaves the sides of pan.
3.       Add butter and grated cheese, blend in well adjust seasoning.
4.       Serve garnished with melted butter and grated cheese.  


Recipe Zuppa Di Ceci






     Sno                        Ingredients                         Quantity

1.                               Dried Chickpeas                      300 gms
2.                               Carrots                                     100 gms
3.                               Onions                                      75 gms
4.                               Olive Oil                                   30 ml
5.                               Rosemary ( Fresh)                   100 gms
6.                               Garlic                                       5 cloves
7.                               Tomatoes puree                       100 ml
8.                               Salt & Pepper                          To taste

Methods


1.       Soak chickpeas in water for minimum of 8-10 hrs.
2.       Chop carrots and onions in small dices
3.       Mince garlic
4.       In a thick bottom stock pot, heat oil, add minced garlic, chopped carrots onions and saute till tender.
5.       Add chickpeas, salt and pepper, chopped rosemary and tomato puree.
6.       Add sufficient stock or water around 1.5 liters.
7.       Simmer for 45 to 60 minutes.
8.       Remove half of the chickpeas and puree it in blender.
9.       Mix puree with the chickpeas, adjust consistency and seasoning.
Serve hot. 

Recipe Bruschetta

4                              Garlic                               4-5 cloves

6                              Vinegar                            1 Tbsp
7                              Basil leaves                      8-10 leaves
8                              Fresh cottage cheese        100 gms
9                              Salt and pepper                 to taste
10                           Black Olive                        4 no


Methods


1 Brush the slices of garlic bread with olive oil and toast the bread till golden brown and crisp.
2 chop tomatoes, onions. Mince garlic. Add olive oil, vinegar and seasoning.
3 Add chopped basil.
4 crumble the cheese.

5 Arrange tomato mixtures on toasted bread, top it up with cheese. Garnish with basil, slice of olive and drizzle of olive oil.

Recipe Spinach and Cheese Cannelloni

5.                               Mozzarella cheese                100 gms
6.                               Pomodoro sauce                   200 ml
7.                               White sauce                          200 ml
8.                               Fresh Basil                            50 gms
9.                               Oregano                                1 tbsp
10.                           Salt and pepper                     to taste
11.                           Cannelloni                            10 nos
12.                           Olive oil                                60 ml


Methods


1.       Wash spinach and roughly chop it.
2.        Heat oil, sweat minced garlic, add spinach and cook it till it wilts, remove excess water and put it aside.
3.       In a bowl add grated ricotta cheese, cooked spinach, parmesan cheese. Add shredded basil and season it well.
4.       Soften the cannelloni by immersing it in hot water, remove and fill the spinach and cheese mixture in cannelloni with the help of piping bag.
5.       Layer a baking tray with white and Pomodoro sauce.
Arrange cannelloni on tray and cover it with small amount Pomodoro and white sauce, cover it with grated mozzarella cheese, sprinkle olive oil, oregano. Bake it for 15-20 minutes at 180 degree Celsius. 

Recipe Bolognese Sauce

5.                               Grated  Carrots                 100 gms

8.                               Tomato Puree                   100 gms
9.                               Red wine                             100 ml
10.                           Brown Stock                       400 ml
11.                           Milk                                       100 ml ( Optional)
12.                           Oregano                              1 tbsp
13.                           Salt and pepper                to taste

Methods

1.       Heat oil in a pan, add finely chopped onions, grated carrots, chopped celery and minced garlic.
2.       Sweat the vegetables, add minced meat and cook for five minutes.
3.       Add chopped tomatoes, tomato puree, red wine, stock and simmer for half an hour.
4.       Add oregano and milk.
5.       Adjust seasoning, use as desired (sauce can be served along with different types of pastas like spaghetti, macaroni or penne etc.
