Dried Chickpeas 300 gms

Carrots 100
gms
3.
Onions 75 gms
4.
Olive Oil 30 ml
5.
Rosemary ( Fresh) 100 gms
6.
Garlic 5 cloves
7.
Tomatoes puree 100 ml
8.
Salt & Pepper To taste
Methods
1.
Soak chickpeas in water for minimum of 8-10 hrs.
2.
Chop carrots and onions in small dices
3.
Mince garlic
4.
In a thick bottom stock pot, heat oil, add
minced garlic, chopped carrots onions and saute till tender.
5.
Add chickpeas, salt and pepper, chopped rosemary
and tomato puree.
6.
Add sufficient stock or water around 1.5 liters.
7.
Simmer for 45 to 60 minutes.
8.
Remove half of the chickpeas and puree it in
blender.
9.
Mix puree with the chickpeas, adjust consistency
and seasoning.
Serve hot.
