Ingredients Quantity

Chicken 1 whole

Olive

Celery

7 Rosemary,
thyme a pinch
8 Salt
and pepper to taste
Methods
1. Remove sinews, blood
and excessive fat from the chicken.
2. Marinate chicken with
olive oil mixed with rosemary, thyme and seasoning, leave it for at least 6 – 8
hrs.
3. Roughly chop
vegetables and season lightly.
4. In a roasting pan,
arrange vegetable along with left out marinate, place chicken on top. ( Back of
the chicken should be facing the direct heat)
5. Roast the chicken at
180 degree centigrade for 20 min.
6. Baste chicken
occasionally with olive oil and change sides.
7. Finish cooking after
around 45 minutes.
8. Remove chicken and
deglaze the pan (deglaze means to remove excess fat), add a little stock to
vegetables and simmer for 5 minutes, blend in the food processor and check
seasoning of sauce.
9. Cut chicken in to 8
pieces and serve hot along with sauce.
